  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup buttermilk
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 3/4 cup cornstarch
  • Peanut oil or canola oil (for frying)
  • 1/2 cup mayonnaise
  • 3 tbsp Thai sweet chili sauce
  • 3 tsp Sriracha hot sauce
  • 8 to 12 Small white corn tortillas (or hard taco shells)
  • 3 cups purple or green cabbage, thinly sliced
  • 1 medium tomato, diced
  • 1/4 cup cilantro, coarsely chopped

Instructions

  1. In a mixing bowl, combine shrimp with buttermilk, salt, black pepper, onion powder, and garlic powder. Mix well and let marinate for 10 minutes.
  2. Place cornstarch in another bowl. Remove shrimp from the marinade and coat each piece thoroughly with cornstarch.
  3. Heat oil in a frying pan over medium heat until shimmering.
  4. Fry the coated shrimp in batches until golden brown and crispy on both sides (about 2-3 minutes per side). Drain on paper towels.
  5. In a separate bowl, mix mayonnaise, Thai sweet chili sauce, and Sriracha until smooth.
  6. Warm tortillas/taco shells according to package instructions. Assemble by layering cabbage and tomato on each tortilla, topping with fried shrimp and drizzling with sauce. Garnish with cilantro.
