  • 2/3 cup vanilla plant-based yogurt (+ more for brushing)
  • Optional: 1/2 cup dairy-free dark chocolate chips or chopped nuts
  • 1 teaspoon cinnamon
  • 1/4 cup unrefined sugar

Instructions

  1. Preheat your oven to 390°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, mash the bananas until smooth.
  3. Add the mashed bananas, vanilla yogurt, self-rising flour, cinnamon, and sugar to the bowl. Mix until combined.
  4. Knead the dough gently on a floured surface until it is sticky yet crumbly.
  5. Fold in any optional ingredients like chocolate chips or nuts.
  6. Roll out the dough to about 0.8 inches thick and cut into scone shapes using a cookie cutter.
  7. Place on the baking sheet, brush with additional yogurt, and bake for about 15-17 minutes until golden brown.
  8. Allow to cool slightly before serving.
