  • 1/4 teaspoon salt
  • 1/4 cup white sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon brown sugar
  • 1/4 teaspoon nutmeg
  • 2/3 cup milk
  • 1 tablespoon vanilla extract
  • 3 large very ripe bananas (mashed)
  • 2 tablespoons melted butter

Instructions

  1. Preheat your skillet on medium-low heat.
  2. In a mixing bowl, whisk together flour, baking powder, salt, sugars, cinnamon, and nutmeg until well combined.
  3. Add milk and vanilla extract to the dry ingredients; stir until just incorporated.
  4. Fold in the mashed bananas and melted butter until the batter is smooth.
  5. Spray the skillet with cooking spray and pour about 1/3 cup of batter onto it. Cook until bubbles appear on top (about 1-3 minutes), then flip to cook the other side for another minute or so.
  6. Repeat with remaining batter to yield approximately 8 pancakes.
