  • 2 ripe bananas, sliced
  • 1 ¼ cups milk (2%)
  • 1 cup heavy cream
  • ⅔ cup sugar
  • ¼ cup cornstarch
  • 4 large egg yolks (room temperature)
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat your oven to 350°F.
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into a 9-inch pie dish and bake for about 7 minutes until golden. Cool completely.
  3. For the pudding filling, whisk together milk, cream, sugar, salt, and cornstarch in a saucepan over medium heat until bubbling. Cook for another 2 minutes while stirring.
  4. In another bowl, whisk egg yolks. Gradually mix in some hot pudding mixture before returning it all to the saucepan. Cook until thickened.
  5. Remove from heat and stir in vanilla extract and butter; let cool.
  6. Layer sliced bananas in the cooled crust and pour the pudding over them. Refrigerate for at least four hours.
  7. For the whipped topping, beat chilled cream with powdered sugar and vanilla until stiff peaks form.
  8. Spread whipped topping over the pie, garnish with banana slices and additional graham cracker crumbs.
