  • ¾ teaspoon baking soda
  • ½ teaspoon Kosher salt
  • ½ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2/3 cup whole milk
  • ¼ cup unsalted butter (melted)
  • 2 teaspoons apple cider vinegar
  • 1 medium apple (peeled and diced)
  • Vegetable oil for baking pan
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 375°F (190°C) and grease muffin cups with vegetable oil.
  2. In a large mixing bowl, combine flour, baking powder, baking soda, salt, granulated sugar, cinnamon, and nutmeg.
  3. Make a well in the center and add eggs, milk, and vanilla extract; whisk until smooth.
  4. Stir in melted butter until fully combined.
  5. Add diced apples and apple cider vinegar just before filling the muffin pan.
  6. Fill muffin cups to about half an inch below the rim and bake for 18–20 minutes or until golden brown.
  7. Cool slightly before glazing with a mixture of powdered sugar and milk.
