  • 6 hard-boiled eggs
  • 1 cucumber
  • 1 large avocado
  • 1/4 cup mayonnaise
  • 1/2 teaspoon paprika
  • Salt to taste

Instructions

  1. Hard boil the eggs by boiling water in a medium pot. Add the eggs gently using a large spoon. Boil for one minute, then turn off the heat and cover for 20-25 minutes.
  2. Once cool, peel and dice the eggs into small pieces and place them in a mixing bowl.
  3. Dice the cucumber after peeling it and removing the seeds. Add it to the bowl with the eggs.
  4. Cut the avocado in half, remove the pit, cube its flesh while still in the skin, scoop out into the bowl.
  5. Add mayonnaise, paprika, and salt to taste; gently fold until well combined.
