  • 2/3 cup light brown sugar
  • 2 large eggs
  • 1 cup whole milk
  • 1 teaspoon pure vanilla extract
  • 6 tablespoons unsalted butter, melted
  • 2 cups finely diced apple (Golden Delicious or yellow apple)
  • For topping: 1/2 cup unsalted butter, melted, 3/4 cup granulated sugar, and 2 teaspoons ground cinnamon

Instructions

  1. Preheat the oven to 425°F and prepare a greased muffin tin with liners.
  2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In a separate large bowl, mix light brown sugar, eggs, milk, and vanilla extract until well combined. Stir in melted butter.
  4. Gradually add dry ingredients to the wet mixture until just combined—do not overmix.
  5. Toss diced apples in the remaining flour and gently fold into the batter.
  6. Fill muffin liners three-fourths full and sprinkle with the cinnamon-sugar topping.
  7. Bake for about 15 minutes or until golden brown. Let cool slightly before serving.
