  • 2 1/2 cups Graham cracker crumbs
  • 1/8 cup Brown sugar (packed light or dark)
  • 10 TBSP Unsalted butter (melted)
  • 2 cups Apple cider (reduced down to 1/2 cup)
  • 24 oz Cream cheese (room temperature)
  • 3/4 cup White granulated sugar
  • 1/2 cup Sour cream (room temperature)
  • 1 tsp Pure vanilla extract
  • 4 Large eggs (room temperature)
  • 1/4 cup Brown sugar (packed light or dark)
  • 1/3 cup All-purpose flour
  • 1/4 tsp Ground cinnamon
  • 1 TBSP Melted butter
  • 1 TBSP Apple Cider
  • 1/2 cup White granulated sugar
  • 2 tsp Ground cinnamon

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine the graham cracker crumbs and brown sugar. Add melted unsalted butter and mix until well combined. Press this mixture firmly into the bottom of your springform pan to create an even layer.
  3. In a saucepan over medium heat, bring 2 cups of apple cider to a boil. Reduce heat and let it simmer until it reduces down to about 1/2 cup. Set aside to cool slightly.
  4. In another large bowl, beat together cream cheese and white granulated sugar until smooth. Add sour cream, vanilla extract, eggs (one at a time), brown sugar, flour, and ground cinnamon. Mix well until fully incorporated.
  5. Slowly pour in the reduced apple cider into the cream cheese mixture while mixing until everything is combined smoothly.
  6. Pour the filling over the prepared crust in the springform pan. Bake in preheated oven for about 80 minutes or until set in the center but still slightly jiggly.
  7. Once baked, turn off the oven and leave the cheesecake inside with the door ajar for about an hour. Then remove from oven and let cool completely at room temperature before refrigerating for at least four hours or overnight.
  8. In a small bowl, mix together melted butter, apple cider, white granulated sugar, and ground cinnamon. Once cheesecake is chilled, drizzle this mixture over top before serving.
