  • 1 large egg (room temperature)
  • 1/3 cup white granulated sugar
  • 1/4 cup vegetable oil
  • 1/4 cup full-fat sour cream (room temperature)
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp kosher salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In one bowl, mix flour, baking soda, salt, cinnamon, and ginger.
  3. In another bowl, whisk together brown sugar, granulated sugar, vegetable oil, sour cream, vanilla extract, and egg until smooth.
  4. Gradually combine the dry ingredients with the wet ingredients until just mixed.
  5. Fold in the chopped apples gently.
  6. Pour the batter into the prepared loaf pan and bake for about 55 minutes or until a toothpick comes out clean.
  7. Allow to cool before glazing with a mixture of powdered sugar, vanilla extract, and milk.
