  • 32 oz full-fat cream cheese (softened)
  • ¾ cup cream of coconut (room temperature)
  • 3 eggs (room temperature)
  • ½ cup white granulated sugar
  • 2 cups sweetened coconut flakes (for topping)
  • 1 cup unsalted toasted almonds (crushed)
  • 14 oz sweet condensed milk
  • 4 oz dark or milk chocolate bar

Instructions

  1. Preheat the oven to 325°F (163°C). In a bowl, combine crushed Oreo cookies with melted butter and sweetened coconut flakes. Mix well.
  2. Firmly press the mixture into a springform pan to form the crust. Bake for about 10 minutes and let cool.
  3. In a separate bowl, beat softened cream cheese with sugar until smooth. Add eggs one at a time, mixing well after each addition. Then mix in cream of coconut and vanilla extract.
  4. Sprinkle in cornstarch while mixing until fully incorporated.
  5. Pour the cheesecake filling over the cooled crust in the springform pan.
  6. Bake for approximately 45 minutes until set but slightly jiggly in the center. Turn off the oven and let it cool inside for an hour.
  7. Melt chocolate with hot heavy whipping cream until smooth; drizzle over cooled cheesecake.
  8. Top with sweetened coconut flakes and crushed almonds; refrigerate for at least four hours or overnight before serving.
