  • 2 large boneless skinless chicken breasts (about 1 pound)
  • ½ cup soy sauce
  • ⅓ cup brown sugar
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 clove garlic (minced)
  • 1 teaspoon sesame oil
  • ¼ teaspoon ground ginger
  • ¼ cup water
  • 1 tablespoon cornstarch
  • Sesame seeds and chopped green onions for garnish

Instructions

  1. Cut chicken into 2-inch pieces and place in a large bowl.
  2. In a small bowl, mix soy sauce, brown sugar, rice vinegar, minced garlic, sesame oil, and ground ginger to create the marinade.
  3. Reserve ¼ cup of the marinade, then pour the rest over the chicken. Marinate for at least 20 minutes.
  4. Preheat air fryer to 375°F. Place marinated chicken in the basket in a single layer and cook for about 8 minutes.
  5. Flip the chicken and cook for an additional 8 minutes until fully cooked (internal temperature reaches 165°F).
  6. In a small saucepan, heat reserved marinade over medium heat. Mix water with cornstarch and whisk into the sauce until thickened.
  7. Baste cooked chicken with thickened teriyaki sauce and serve over rice; garnish with sesame seeds and green onions.
