  • 1 lb ground beef
  • 6 bell peppers
  • 1 cup long grain white rice (uncooked)
  • 1 cup shredded cheddar cheese
  • 1 can Rotel tomatoes
  • 1 can tomato sauce
  • Spices: chili powder, cumin, cayenne pepper

Instructions

  1. In a skillet over medium-high heat, brown the ground beef until fully cooked. Add diced onion and seasonings; cook until onions soften.
  2. Add Rotel, tomato sauce, beef broth, and uncooked rice to the skillet. Stir well and cover; cook on medium-low for 15-20 minutes until rice is tender.
  3. Stir in shredded cheddar cheese until melted.
  4. Cut off the tops of each bell pepper and remove seeds. Fill each pepper generously with the cheesy mixture.
  5. Place stuffed peppers in the air fryer at 400°F for about 10 minutes.
  6. Sprinkle additional cheese on top of each pepper and return to the air fryer for an extra minute until melted.
  7. Serve garnished with fresh cilantro.
