  • 1/4 cup red onion, diced
  • 1 Roma tomato, diced

  • Juice of 1 lime

  • 8 egg roll wrappers
  • Olive oil spray

Instructions

  1. In a medium bowl, mash the diced avocados to your desired consistency. Mix in red onion, tomato, cilantro, garlic powder, lime juice, salt, and pepper.
  2. Lay out an egg roll wrapper on a clean surface and place about two tablespoons of the avocado mixture in the center. Fold up the bottom corner over the filling. Fold in the sides and roll tightly to seal.
  3. Preheat your air fryer according to its instructions. Lightly spray each egg roll with olive oil spray for extra crispness. Place them in a single layer in the air fryer basket.
  4. Cook at 375°F (190°C) for about 12 minutes or until golden brown and crispy.
